Malvasia passito secco, non-sweet dessert wine
We do not do the “Pensiero”. We leave it to the oldest instrument of all: the sun.
The sun dries the Malvasia di Candia Aromatica, makes it overripe, concentrates it and leaves only its richness inside the grape.
We squeeze this gold, place it in wooden barrels and we forget about it, as if it were a sacrifice to a higher entity.
The fermentation takes place in the wood, as it was done in ancient times, but using a barrel for aging, which gives the wine further nuances that add to the powerful, floral, honey and candied fruit bouquets typical of the surmatua grape, for this extraordinary dry passito, obtained as a tribute to the pagan Sun God.

DENOMINATION: EMILIA IGT – Typical Geographic Indication Late Harvest white
SOIL: chalky and clay
ALTITUDE: 380 meters
GRAPE VARIETY: Malvasia di Candia Aromatica 100%
PRODUCTION PER HECTARE: 70 quintals
WINE MAKING AND SHARPENING: the grapes are harvested in mid-November, after a light pressing, the grape must is slowly fermented in a French Tonneaux where further refinement takes place for 12 months.
THINNING: best grapes selection.
HARVEST: manual harvest with particular selection of the grapes.
ORGANOLEPTIC CHARACTERISTICS: amber colour, sweet and sour taste, agrumes, citron, rose and vanilla. Silky and warm with long persistence.
COMBINATIONS: herbs-cheese, pumpkin tortelli, almond dessert.
SERVING TEMPERATURE: 14°C
