Wine Description
Vedovona is a sparkling white wine made from 100% Malvasia di Candia Aromatica, vinified using the traditional bottle-fermentation method.
Unlike the Martinotti/Charmat method, this technique results in finer, more elegant, and less aggressive bubbles.
Its distinctively white, cloudy color brings to mind the aromas of wheat, hay, and wild herbs. The presence of the yeasts further enhances the bouquet with pastry-like notes, such as bread crust.
Fresh and easy-drinking, yet complex due to the aging on the lees, Vedovona is the perfect companion for summer afternoons, making it hard to resist another glass.
Food Pairings
It pairs beautifully with grissini, focaccia, taralli, and walnut bread. The ideal cheese to accompany it is Parmigiano Reggiano, aged at least 24 months, but it also pairs wonderfully with grilled fish.
