Wine Description
The winery’s historic wine, Poggio is a still red wine, a blend of Cabernet Sauvignon, Merlot, Barbera, and a distinctive touch of 1% dried Bonarda.
The Cabernet provides body, structure, and longevity, while the Merlot adds finesse and elegance. The Barbera, present in small quantities, imparts a pleasant freshness. Finally, the dried Bonarda makes this wine truly unique, representing the signature of its producer.
The journey of Il Poggio is a long one, but well worth the wait.
After an initial rest of 9 months in steel, the wine matures for 12-14 months in barriques and tonneaux made of French oak, of various toasts and ages.
With the arrival of summer, it is bottled and left to refine further for 18-24 months in a horizontal position, a process that softens the tannins and enhances the development of captivating tertiary aromas.

Food Pairings
To open an hour before serving; decanting is recommended but not necessary.
We suggest pairing with game, roasted red meats, grilled steak, and braised dishes. However, it can also be enjoyed as a meditation wine, best savored alone with a piece of extra dark chocolate in front of a roaring fireplace.
