Wine Description
Pensiero is a sweet wine made from 100% Malvasia Aromatica di Candia. Specifically, it is a late harvest wine, meaning the grapes are left to dry directly on the vine. This method, though risky, is highly noble and respectful, enhancing the natural qualities of both the vine and the grapes.
Pensiero is vinified in acacia tonneaux, where spontaneous fermentation begins thanks to indigenous yeasts. The wine then rests and evolves for a year, gaining complexity and depth.
Bottled in half-liter bottles, the production is limited to no more than 500 units.
Its aromas evoke the classic Christmas panettone, with hints of spices, honey, candied fruit, and dried apricot. Despite its rich bouquet, it is surprisingly balanced on the palate, leaving a lasting impression on those who taste it.

Food Pairings
Perfect with dry desserts from the Po Valley tradition, such as Sbrisolona. For a more daring pairing, try it with a selection of distinctive cheeses, including French varieties.
